Sea scallops seared in bacon fat and finished with pancetta bits

Hot Lobster Spoons
Poached lobster with salted butter drizzle and buttered panko crumbs

Tuna Tartar Wontons
Diced ahi tuna, seaweed salad, plum sauce and spicy mayo drizzle
Served on a fried wonton, finished with sesame seeds and scallion
